Power Driven Ammi Kal and Aatu Kal Equipment for authentic Indian Cooking

Joel Engineering has effectively introduced their newly developed Power-Driven Ammi Kal and Aatu Kal for the live kitchen concept at the 5-Star Restaurant facility of Hotel Leela in Hyderabad. Both pieces of equipment were entirely designed and constructed in-house.

Power Driven Ammi Kal

 

Introduction

Ammi Kal, commonly referred to as Sill Batta in local terminology, is a traditional Indian grinding instrument utilized for the preparation of various food items, including masalas, herbs, and minerals, through a conventional stone grinding technique. This tool enables users to grind ingredients immediately prior to use, thereby preserving optimal freshness and flavour. Additionally, Ammi Kals represent an environmentally sustainable alternative to electric mixers.

Design

A manually operated method designed for home use involves a small flat stone paired with a cylindrical rolling stone. At Joel Engineering, we have achieved success in integrating a power-driven mechanism for the commercial application of the Ammi Kal machine. This driving mechanism comprises an electric motor and a robust gear drive that facilitates the reciprocating movement of the grinding stone.

Considering the requirement from the customer for the aesthetics of the equipment, Joel Engineering successfully developed a durable piece of equipment characterized by excellent features, fit, and finish.

Power Driven Aatu Kal

Introduction

Aatu kal is a time-honoured and traditional kitchen tool that remains prevalent in contemporary cooking, commonly found in households throughout India. This classic Ural or Aatu Kal set serves as an ideal solution for everyday culinary needs, allowing users to effortlessly crush and grind ingredients for masalas, dosa, and idly batter.

Design

Joel Engineering has effectively designed and produced a fully stainless-steel commercial-sized powered Aatu Kal. The design concept draws inspiration from the traditional Aatu Kal design and its operational principles, ensuring that the authentic flavour of the ground material is preserved.

The equipment is constructed with a durable framework made of food-grade stainless steel. Its driving mechanism includes an electric motor, a reduction gearbox, and a secondary gearbox, which facilitate the rotation of the wiper. Additionally, the machine is equipped with a child stone lifting feature and a tilting mechanism for the main stone, allowing for the convenient discharge of the ground material.

Joel Engineering has successfully created a robust piece of equipment that meets the customer’s aesthetic requirements, showcasing outstanding features, fit, and finish.
